Saute carrots, celery, garlic and onion in ~2 Tablespoons of olive oil for ~45 minutes or until translucent. Add broth, bay leaf and diced chicken. Bring to a boil, and then reduce to a simmer. Whisk eggs until frothy and then whisk in lemon juice.
