Greek yogurt pancakes with grape and thyme spoon sweets

'Spoon sweets’ (fruit cooked in a heavy sugar syrup until almost candied), are served in the Middle East and Greece with strong coffee or cheese. The version here is slightly less sweet than is traditional. You need to start them more than a day in advance.
