Greek Zucchini Boats

Preheat the oven to 375ºF. Slice the zucchini in half lengthwise. With the tip of a sharp paring knife, cut a 1/4-inch border around the flesh. Use a small spoon or a melon baller to scoop out the flesh and seeds, leaving a shell about 1/4-inch thick.
