BIRMINGHAM, Ala. -Considering the long his�tory of Greek cuisine, it?s little wonder those traditions have been embraced by so many, whether Greek or non-Greek. Birminghamians, no matter their ancestry, for years have favored Greek dishes. ?In the beginning it was the Greeks who established the civilized food practices which spread throughout the West�ern World,? explained Elaine Lyda, publicity Chairperson for the 41st Annual Greek Festival at Holy Trinity-Holy Cross Greek Orthodox Cathedral on Bir�mingham?s Southside. In addition to Greek cui�sine, the festival included Greek music, Greek dancing by the cathedral?s youth and a Greek market place sell�ing imported food, icons, fine jewelry, art and more.
