KOUZINA: Pastichio: Alabama-Style
BIRMINGHAM, Ala. -Considering the long history of Greek cuisine, it?s little wonder those traditions have been embraced by so many, whether Greek or non-Greek. Birminghamians, no matter their ancestry, for years have favored Greek dishes.
?In the beginning it was the Greeks who established the civilized food practices which spread throughout the Western World,? explained Elaine Lyda, publicity Chairperson for the 41st Annual Greek Festival at Holy Trinity-Holy Cross Greek Orthodox Cathedral on Birmingham?s Southside.
In addition to Greek cuisine, the festival included Greek music, Greek dancing by the cathedral?s youth and a Greek market place selling imported food, icons, fine jewelry, art and more.
